Ingredients

  • 2 scoops of sugar free vanilla ice cream (see tips)
  • 1 bag of chai collagen
  • 1 cup almond milk, unsweetened (or light coconut milk)
  • 2 pinches Himalayan crystal salt or sea salt
  • Ice cubes (optional)
  • 20 g dark chocolate, at least 92% cacao (see tips)
  • 2 cherries (optional)

Who’s in the mood for ice cream? This week I bring you a 5-minute ‘keto friendly’ low carb dessert that is simply irresistible: Chai Latte Ice Cream Sundae.

With sugar free vanilla ice cream, a frothy iced chai latte, dark chocolate sauce and ruby red cherries for garnish.

Chai is a mix of fragrant spices such as ginger, turmeric, cinnamon and cardamom. These spices can contribute to a healthy gut, strong immune system, stable blood sugar levels and healthy metabolism. I love the unique flavor of chai spice, in a warming latte during wintertime or a refreshing snack in the midst of summer.

I used this Golden Chai Collagen as the base for the chai latte, with pure collagen (marine) and coconut MCT powder (free from added sugars). You could replace it with Collagen Coffee (for a ‘Café Glacé’ affogato sundae) or Collagen Matcha if you’re a matcha lover. You could also just use coffee or matcha powder, but the result won’t be as rich and frothy.

Collagen is the main component of our bones, skin, ligaments and cartilage. It keeps our skin firm and smooth, and can help to protect our bones and joints too. Our ancestors used to get collagen from bone broth (ex. homemade chicken broth), wild fish (cooked with the bones)… but nowadays our modern Western diet often lacks this important building block. That’s why I like to add it to smoothies and shakes.

As the base for this Chai latte Ice Cream Sundae I used the vanilla coconut ice cream recipe from my book Go Keto. I’ve also added suggestions in the tips if you prefer to buy ice cream in your local supermarket.

Easy Low Carb Dessert: Chai Latte Ice Cream Sundae (Keto Friendly, Sugar Free, Dairy Free, Paleo, Whole 30)

DIRECTIONS:

  1. Start by melting the chocolate au bain-marie (in a heatproof bowl over a pan of simmering water). If desired, add some keto sweetener for a sweeter chocolate sauce. You could also add a spoonful of MCT oil if you prefer the chocolate sauce to stay liquid for longer (instead of turning into a chocolate shell as soon as it hits the ice cream). Set aside while you prepare the chai latte.
  2. Mix the bag of chai collagen with a cup of chilled almond milk (or other unsweetened milk of your choice) and two pinches of sea salt (for flavor balance) into a creamy chai latte (with a blender or by vigorously shaking everything in a sealed glass jar or drinking bottle).
  3. You can also add a little keto sweetener or this vegan vanilla protein powder sweetened with stevia to balance the powerful flavor of the chai spice.
  4. Fill a glass with crushed ice cubes and two scoops of vanilla ice cream. Pour the chai latte on top. Garnish with chocolate sauce, chocolate chunks and a few cherries if desired. For an extra rich version, you can add a dollop of (sugar free) whipped (coconut) cream as well ;-)

JULIE’S TIPS & TRICKS:

  • I used sugar free vanilla coconut ice cream (with a vegan/dairy free option) from my book ‘Go Keto’. You could also buy sugar free ice cream in the supermarket. If this dessert doesn’t need to be ‘keto friendly’, you can use whichever ice cream you prefer.
  • For the chocolate sauce, I used dark chocolate with 99% cacao (like Vivani, Lovechock, Lindt…). You could add some keto sweetener while melting the chocolate if you prefer sweeter chocolate but I actually really like the contrast between the bitter cacao and sweet ice cream.
